Instructions

To make the noodles

Step 1
In a pan heat the butter and chill oil together. To this add onions to sauté for 8-10 minutes until golden brown followed by garlic, jalapeños and chillies. Cook them for additional 5-7 minutes. Once everything is well cooked add the spice blend and mix it all together.
Step 2
Pour in milk and stock to this mix and let it come to a boil before adding the noodles. The noodles cooking time can defer depending on the thickness and ingredients so cook them according to the package instructions.
Step 3
While your noodles are cooking in a different bowl add the 2 cubes of Japanese curry mix and pour in some stock to create a smooth mixture before adding them to the noodles. The easiest way would be to blend the cubes and the stock together but it can be done by hand with the help of a spoon or fork.
Step 4
Once the noodles are almost cooked add the curry mix and stir everything together. The consistency would get much thicker after adding the curry cube mix as it has cornstarch so adjust with more stock if needed.
Step 5
To finish add the sauce mix (tomato ketchup, siracha, soy sauce, lemon juice, honey) and cheese slices and give it one last mix. To assemble add the noodles, crispy chicken, runny boiled egg, green onions and sesame seeds to a bowl and serve hot.

To make the crispy baked chicken

Step 6
Dry the chicken thighs with a paper towel and pound it to even out the thickness. Season them with salt and pepper.
Step 7
To make the breadcrumbs blend 4-5 slices of bread until fine. Toast them in a dry pan for 5-6 minutes and season it with the ingredients listed above.
Step 8
In another whisk in 2 whole eggs with salt and pepper and in another bowl mix plain flour, corn flour and salt to taste and pepper.
Step 9
To coat the chicken press it first in flour making sure all sides are coated then dunk it in eggs and drench off the excess. Then press it in a final coat of breadcrumbs until all sides are covered. Follow the same with the rest of the chicken and place it on a baking sheet. Drizzle it with olive oil and bake it in a preheated oven at 180 Celsius for 20-25 minutes or until the chicken is completely cooked through and the crust is crispy and golden.
Step 10
Remove it out of the oven and glaze it with hot honey. Cut medium size strips and serve.

To make the hot honey glaze

Step 11
Heat butter, honey and water in a small saucepan on low heat. Once hot and simmering take it off the heat and add the spices. Mix everything together and use it to glaze the baked chicken
