Creamy Poblano Pepper Enchiladas

Instructions

Step 1
1. Heat your pan on medium to low heat.
Step 2
2. Add half of the butter to the pan and melt.
Step 3
3. Once the butter is melted, add the smashed garlic.
Step 4
4. Add the chopped poblano peppers.
Step 5
5. Cook the butter, garlic and poblano peppers for 10 minutes or fragrant.
Step 6
6. Add the chipotle peppers in adobo sauce to the pan. Continue to cook for 10 more minutes.
Step 7
7. Add the remaining butter to the pan.
Step 8
8. Once the butter is melted, add in your all-purpose flour. Stir until a paste is formed and the ingredients are well covered.
Step 9
9. Once the flour is mixed and pasty, add in your chicken broth. Mix until smooth.
Step 10
10. Move the ingredients to a bowl and blend together using an immersion blender.
Step 11
11. In a low heat pan, add the sauce and add in your milk. Stir until well incorporated. Continue to simmer on low. Continue to stir until the sauce thickens.

12. Once the sauce has thickened , add in Salt, Onion Powder, and Chicken Bouillon. Turn off the heat after ingredients are incorporated well.

13. Add in your chopped cilantro and stir into the sauce.

14. Take the pan off of the heat and begin prepping your chicken.
Step 15
15. In a bowl, add in your Chicken, Colby Jack Cheese, and Can of Diced Chiles and mix together.
Step 16
16. In a 9x13 pan, add two ladals of the sauce and coat the bottom of the pan. Add the prepared Chicken, Cheese and Chile mix to a warm tortilla and begin layering.*
Step 17
17. Once your enchiladas are prepared, dump the remaining sauce mixture on top of the enchiladas and evenly spread.

18. Add Pepper Jack cheese to the top of the enchiladas and Sauce
Step 19
19. Preheat Oven to 375 and add in your enchiladas for 20 minutes or the cheese is melted
