Instructions
Step 1
Turn your oven's broiler on high. Take your Poblano and jalapeno peppers and coat them in your cooking oil, and place them on a baking sheet. Place the baking sheet under the broiler for a few minutes, or until the peppers start to blister.
Step 2
When the peppers have started to blister, flip them to make sure all sides of the peppers have been exposed to the heat. After all peppers have been roasted, remove the peppers from the oven and set them into an ice bath.
Step 3
After the peppers have cooled, remove the skins and stems from the peppers. After the Poblanos and jalapenos have been peeled and destemed, add them to a blender.
Step 4
Add your garlic cloves, lime juice salt and pepper to the blender. blitz these ingredients until they take on a relish consistency
Step 5
Then add your Greek yogurt and cilantro, and blend.
Step 6
This is the time to adjust your dressing. If it's too spicy, add yogurt. If there's too much yogurt, add salt and lime.
Step 7
Before serving, let dressing rest in the refrigerator for at least 1 hour, or overnight for best results.
