Ingredients
4 servings

3 Tbsplime juice

1 Tbspolive oil

1 tspcumin

1 tspsalt

1 tspgarlic powder

1can reduced-sodium chickpeas
drained and rinsed

1 headcauliflower
small, cut into bite-sized pieces

1 cupsour cream

¼ cupcilantro
chopped

1 TbspSiracha sauce

8flour tortillas

red cabbage
shredded

radishes
sliced

cotija cheese
crumbled

1 tspchili powder
Instructions
Step 1
heat oven to 450
Step 2
whisk together 1 tbsp lime juice, the oil chili powder, cumin, salt, and garlic powder in a large bowl. Add chickpeas and cauliflower and toss until evenly coated
Step 3
cook veggie mixture for 20 minutes, stirring every 10 mins. Continue cooking until the desired crispness, about 5 minutes more.
Step 4
stir together sour cream, cilantro, siracha and remaining 2 tbsp of lime juice in a small bowl until combined. Spoon cauliflower mixture onto tortillas and top with sauce and toppings.
