Instructions
Step 1
Heat 1 tbsp oil in a large skillet over medium high heat. When hot, add the shrimp. Cook on each side 1-2 minutes to cook through. Season with salt and pepper and set aside.
Step 2
In the same skillet, add a tad extra olive oil. Add garlic, onion, bell pepper, and cauliflower. Saute until softened.
Step 3
Add the spinach and chili flakes. Season to taste with salt and pepper. Stir fry until spinach is wilted.
Step 4
Add the shrimp back to the pan. Cook 1-2 minutes to reheat
