Instructions

Step 1
Preheat oven to 375°F. Grease a muffin pan or line with muffin liners.
Step 2
In a large bowl whisk together flour, baking soda, pumpkin pie spice, and salt.
Step 3
In a medium bowl, whisk together eggs, granulated sugar and brown sugar until combined.
Step 4
Add oil and whisk until combined.
Step 5
Add sweet potato purée and milk and whisk until combined.
Step 6
Pour the sweet potato mixture into the flour mixture and mix gently just until combined.
Step 7
Divide batter evenly in a silicon muffin pan or a cupcake pan with paper liners.
Step 8
Add granola oat clusters to top before baking.
Step 9
Bake for 16-22 minutes until a toothpick inserted into the center of the muffin comes out clean.
Step 10
Top with a little whipped cream cheese after they cool and enjoy!
