Instructions
Step 1
Finely chop onions. Finely chop leeks using only the white part.
Step 2
Add olive oil, onions and leeks to a big pot and sauté without browning.
Step 3
Peel and chop Potatos finely.
Step 4
Add potato’s and the stock cubes disolved in the boiling water to pot and turn to low.
Step 5
Add salt and pepper to taste. Simmer pot for 20 minutes.
Step 6
Blitz into smooth soup.
Step 7
Leave to cool, then add the cream and stir.
