One for the meal prep gang; a naked burrito bowl loaded with rice, black beans, sweet potato and plenty more goodness. The spicy chipotle dressing makes it pop.
Ingredients:
400g rice
1 large sweet potato
200g sweetcorn
180g tomatoes
1/2 a red onion
1 tin black beans
1 avocado
Big handful of coriander
Dressing:
2 tbsp mayo
1 heaped tsp chipotle paste
1 lime
Bunch of coriander
Salt and a little water
Method:
Cook the rice and leave to cool slightly. Cube the sweet potato and roast at 200C for 35-40 minutes until soft and caramelised. Dice the onion, tomatoes and avocado. Drain the sweetcorn and drizzle with olive oil and salt, whack in the oven with the sweet potato and roast until charred. Add everything to a large bowl. Mix together the dressing infused reserving the water until last and add as needed. Pour over the salad and mix well. Serve with coriander and lime
