Instructions

Step 1
1. Preheat the oven to 180°C/350°F/Gas mark 4.
Step 2
2. In a blender or food processor, blitz the garlic, onion, tomato concentrate, sundried tomato, and passata - pour into baking tray

3. In a bowl, mix the ricotta, eggs, cheeses and defrosted spinach well - season.

4. Add the almond meal and baking powder to the mix and stir until just combined.
Step 5
5. Using a tablespoon or small ice cream scoop, form balls with spinach mix (about 3-4 per serve) and place them into the sauce in a single layer - leaving space between them.
Step 6
6. Bake for 25-30 minutes or until the top is golden brown (the balls may lose their shape a bit).
Step 7
7. Serve with a fresh salad.
