Delicious nutritouos qiuck bread with lots of fiber. Not too sweet, but the pineapple and raisins give it enough to satisfy the morning sweet tooth. Note: This recipe tool would not easily let me use two types of stevia, and 2 types of flour, so I had to be creative and place them out of order :(
So, mix wet ingredients, add dry, then fold in mix ins as with most quick bread recipies...

Ingredients

3eggs
½ cstevia
1 cunsweetened applesauce
½ cbrown sugar and stevia blend
2 cwhite flour
3 Tvanilla
8 ozpineapple
drained, crushed
2 cupszucchini
1 ½ tbaking powder
1 tbaking soda
2 Tcinnamon
1 cwhole wheat flour
1 cwalnuts
1 craisins
Pre-heat oven to 325 degrees Farenheit
Instructions
Step 1
Beat first 3 ingredients, add vanilla, pineapple, and zucchini.
Mix well and add dry ingredients, just until moistened. Do not overmix.
Add 2-3 T of flour to nuts and raisins to coat, then fold them into the batter. Divide among loaf pans or muffin tins. Bake for 50-60 minutes for loaf pans or 18-22 minutes for muffins. Test for doneness before removing from oven. Let cool on rack. Enjoy!
