Ingredients

For the Meatballs

¼ cuprice
cooked

1 poundground turkey

2garlic cloves
minced

1egg

¼ cupcilantro
chopped

1 teaspoonground cumin

¾ teaspoonsalt kosher

pepper

For the Soup

2 teaspoonscanola oil

½ cupwhite onion
diced

1clove garlic
diced

2 cupscarrots
sliced

1 ½ cupsbaby potatoes

4 cupsbeef broth
unsalted

15 ouncecanned chopped tomato with herb
don’t drain

8 ouncetomato sauce

½ teaspoonground cumin

½ teaspoondried oregano

1.5zucchini
large, quartered and sliced

¼ cupcilantro
chopped

salt
to taste

Instructions
Step 1

- Cook the rice
- Get a large bowl and add in ground turkey, cooked rice, garlic, egg, cilantro, cumin, salt and pepper and combine.
Step 2

- Roll the ground turkey into your preference of meatball sizes. Set aside.
Step 3

For the soup - Heat up canola oil over medium heat in a large pot. Add onions and carrots. Cook for 3 min. - Add garlic and cook for about 30 secs.
- Add baby potatoes, beef broth, tomatoes, tomato sauce, cumin oregano to the pot and bring to a simmer for about 10 mins.
Step 4

- Gently drop the meatballs into the broth and simmer for about 10 mins or until the meatballs have cooked.
Step 5

Add zucchini. Salt and pepper to taste and let cook for about 5 minutes. Then turn off heat. Let sit for about 10 mins.
Step 6
Get the corn tortillas and start heating them up.
Step 7

Add sliced avocado and top with chopped cilantro right before serving with sliced limes on the side. Enjoy!!
