Instructions
Step 1
Peel potatoes and cut into even sized chunks for quicker cooking, boil in salted water for 15 minutes/till soft, add broccoli the last minute.
Drain and mash well with a pinch of salt, ground black pepper, zest of 1 lemon and butter. Set aside.
Step 2
Peel and chop carrots and onion, fry in oven proof pan with 1 tbsp oil (medium heat) 15 minutes.
Step 3
Preheat oven at 180°C.
Meanwhile heat the milk in a pan (medium heat), when simmering add the frozen fish, cook through, then transfer them out of the milk with the pan off the heat.
Step 4
Stir the flour into the vegetables and gradually add the warm fishy milk (ladle at a time).
Stir continuous until a smooth sauce, stir in spinach till thawed and season.
Step 5
Flake in the cooked fish, add prawns and mustard and juice of half the lemon. Grate in cheddar and stir to combine.
Step 6
Top with the potato broccoli mash and fork to give texture.
Step 7
Bake 35 to 40 minutes till browned.
