Super quick Bolognese-ish sauce

A recipe I have perfected with my mum after many years. We needed a quick way to create a nice tomato-y pasta dish after she came back from work. We found that olives and mushroom stock add that special something.

Instructions

Step 1
Cook your favourite kind of pasta. I personally like spaghetti (sorry Italians).

Add two tablespoons of oil into a large saute pan with tall sides. On a medium heat, sautee the onions and courgette until the onions are soft.

Move the onions to the outside of the pan. Put the ground beef in the middle. Use a utensil to separate the beef into small pieces and mix with onions. Cook until it starts to brown.

Step 4
When beef is slightly brown, add in the sliced mushrooms, crushed garlic, basil and chili powder. Cook until mushrooms shrink and soften.
Step 5
Prepare the stock in a jug with the boiling water. Add in to the pan along with the tin of tomatoes and dolmio sauce. If tomatoes have large bits, break apart using utensil.

Stir all together and lower the heat slightly. Partially cover until sauce starts to bubble. Turn down heat once bubbling and leave to reduce for 30 minutes, stirring from the bottom occasionally to prevent clumping.

Serve on pasta with a layer of your favourite cheese between the sauce and pasta.
