I’ll preface by saying I know it sounds weird, and I apologise unreservedly to all Italians! That said, this pasta is fresh, summery and bursting with herbs and a fruity zing. Try it! I dare you!

Instructions

Step 1
Boil the pasta as per the instructions on the packet (usually 12 mins for dried pasta or 4 mins for fresh). Make sure the water is nice and salty to flavour the pasta and cook till just al dente. Set a timer for 5 mins before the pasta has fully cooked and add the peas to save on cooking time

Make the basil oil by combining the basil, 2 cloves of peeled garlic, 1 cup of oil and salt and pepper to taste, and blending in a food processor to your desired consistency

Step 3
Once the pasta and peas are cooked, drain the pasta, reserving a small amount of the pasta water, and return to the pan with a splash of pasta water.

Add the desired amount of basil oil to the consistency you want, and add the apple juice and lime juice, tasting as you go until the sauce has a fragrant taste of basil, apple and lime. Season with salt and pepper to taste
Step 5
Serve on its own, or with diced green olive, pumpkin seeds or charred courgette. If you have any left over, it’s great cold with grated green apple for a fresh, summery twist!
