Instructions

Step 1
Prepare the Chicken Marinade: -In a blender or food processor, combine the chopped mixed herbs (dill, cilantro, scallions, and chives), minced garlic, lime juice, olive oil, ground cumin, chili powder, salt, and pepper. Blend until you have a smooth marinade.
Step 2
Marinate the Chicken: Place the chicken in a resealable plastic bag or a shallow dish and pour the herb marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally, marinate it for a few hours for maximum flavor.
Step 3
Grill or Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and grill or cook it for about 6-8 minutes per side or until the chicken is cooked through and has a nice char. Ensure the internal temperature reaches 165°F (74°C). If cooking on a skillet, cover while it's cooking and then uncover to char briefly on each side. May need to sauté herbs separately. Remove the chicken from the grill or skillet and let it rest for a few minutes. Slice it into thin strips.
Step 4
Assemble the Tacos: Warm the tortillas in a dry skillet or microwave them until they're pliable. Place a spoonful of shredded lettuce on each tortilla, followed by slices of grilled chicken. Top with preferred items such as diced tomatoes, diced red onion, shredded cheese, sliced avocado, and salsa.
