One Pot Creamy White Lasagna Soup

Imagine the comforting flavors of a classic white lasagna, but in a steaming bowl of soup that's incredibly easy to make. This one pot lasagna soup is the embodiment of Italian comfort food, simplified for your convenience and infused with all the flavors you'd expect from a traditional white lasagna. This recipe can be made with traditional pasta rather than broken lasagna sheets but it is called lasagna soup for a reason! I hope you enjoy it!

Creamy White Lasagna Soup

8 ozground italian sausage
mild or spicy

1onion
small, diced

4 ozmushrooms
sliced

3cloves garlic
minced

4 cupschicken broth

5 ozlasagna sheets
broken

2 tspitalian seasoning

1 tspgarlic powder

½ tsponion powder

¼ tspsalt

¼ tspblack pepper

red pepper flakes
optional

5 ozbaby spinach

1 cupheavy cream

¼ cupgrated parmesan cheese

¼ cupshredded mozzarella cheese

Instructions
Step 1
In a large soup pot or Dutch oven, cook the ground Italian sausage over medium-high heat until browned and cooked through. Break it up into smaller pieces as it cooks.

Step 2
Remove the browned sausage from the pot. Leave the residual fat.
Step 3
Add the sliced mushrooms and diced onion to the pot and cook for about 4-5 minutes, until the onion becomes translucent and the mushrooms are cooked. If there isn’t enough fat/oil in the pot from the sausage, melt 1 tbsp of butter before sautéing the mushrooms and onions.


Step 4
Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 5
Pour in the chicken broth and add the broken lasagna sheets. You can also use any other pasta for this step but it is called lasagna soup for a reason!


Step 6
Season with italian seasoning, garlic powder, onion powder, salt, pepper and red peppper flakes (optional).






Step 7
Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 10-15 minutes or until the lasagna noodles are tender.
Step 8
Add the cooked sausage and baby spinach to the pot. Simmer for another 5 minutes or until the spinach wilts.


Step 9
Add heavy cream into the soup until fully combined.

Step 10
Stir in the grated Parmesan cheese and mozzarella cheese (optional) until they melt and the soup becomes creamy.


Step 11
Taste the soup and adjust the seasoning with salt and pepper as needed.
Step 12
Serve hot, garnished with extra parmesan/mozzarella cheese and fresh basil, if desired.
