Instructions
Step 1
π§ Add about 1 tbsp each butter and oil from a jar of sundried tomatoes to a pan

Next add in 6 cloves grated garlic, 1 diced white onion and about half a jar sundried tomatoes

π§ Once softened, add around 200ml chicken stock, the juice of a lemon, and 1 tbsp each smoked paprika and oregano
Step 4

Finally mix in approx 150ml single cream, 75g parmesan and 100g spinach and allow everything to simmer together

π§ Once it has simmered, it should have reduced and thickened a little - if you prefer a thicker sauce, you can add a mix of cornflour and cold water

If itβs too thick, you can add in more stock and/or cream

π§ Meanwhile, in a separate pan, fry off thick slices of halloumi - we suggest 3-4 pieces per person
Step 8

Once the halloumi is golden on both sides, add to the simmering pan of sauce, and serve immediately
Step 9
π§ We had ours with some airfried potatoes and tenderstem broccoli, but this goes perfectly with rice, pasta, or any form of potatoes to be honest!
