Instructions
Step 1
Chop and deseed the cucumber. Cut the tomatoes in half. Finely chop the parsley and mint.
Step 2
Grate the cucumber, sprinkle with salt and squeeze out all the liquid using a sieve.
Step 3
Add the cucumber to the yoghurt, garlic and mint. Mix well. Then set aside your tzatziki.
Step 4
Cook the couscous according to the packet instructions - add a stock cube when the water is boiling.
Step 5
Cook the tomatoes in olive oil and garlic.
Step 6
Make your dressing - juice of a lemon, drizzle of olive oil, 1 tsp dijon mustard, garlic, 1 tsp honey, salt and pepper. Stir well.
Step 7
Add the tomatoes with the juices, chopped parsley and dressing to your couscous. Add the dressing gradually, you do not have to use it all.
Step 8
Season the salmon with salt and pepper. Add some butter before roasting in the oven at 180 degrees Celsius for 10 minutes (fan oven).
Step 9
Assemble the dish - couscous, salmon and topped with tzatziki.
