Easiest sausage and tomato pasta

This super easy pasta uses store cupboard staples so you always have a quick and easy pasta dish ready to go!

Instructions

Step 1
Put the pasta on to boil for about a minute less than the suggested packet cook time. Make sure the water is well salted to season the pasta, and before draining make sure to reserve a cup of the starchy pasta water (this helps make the sauce). Cook till al dente - cooked but pleasantly firm
Step 2
Cook the sausages per packet instructions. This recipe is great for using up any leftovers you might have from the night before
Step 3
Finely dice or crush a clove of garlic, and fry in olive oil for about a minute on a medium heat. Whilst this cooks, finely dice the olives and then add to the garlic
Step 4
Measure out the tomato purée and then add to the garlic and olives. Season generously with black pepper (no salt), and add any herbs or seasoning (chilli, rosemary, chives etc all make for a very tasty pasta).
Step 5
Reserve a cup of the starchy pasta water and then drain the pasta. Add the pasta water to your sauce a bit at a time to kisses it. The salty water will season the sauce as it is added and help to make it silky. When the tomato purée is mixed in and the sauce is smooth, add the pasta and coat.
Step 6
Drizzle some more olive oil over the pasta to make the sauce shiny and smooth. Taste the pasta now and season as needed - if it needs more punch, add some lemon juice. It’s it’s too tomatoey add sugar. It should have enough salt from the pasta water!
Step 7
Cook the cooked sausage and add to the pasta mixing it all in. Then serve immediately!
