Veggie Fajita Pizza With Chipotle Mayo

Get set for the ultimate veggie pizza with sweetcorn, pepper and green chilli sautéed with smoky spices. For a meaty experience, add Quorn Pepperoni slices or vegetarian bacon. Top with cheddar and mozzarella, and don't forget the chipotle mayo to serve!

Instructions

Step 1
Preheat the oven to 200°C/ 180°C (fan)/ gas 6 Put a large baking tray (or two!) in the oven to heat up (this will stop the pizza bottoms from going soggy!)

Cut the red pepper[s] in half (scrape the seeds and pith out with a teaspoon), then chop into small bite-sized pieces

Peel and finely slice the shallot[s]
Step 4
Peel and finely chop (or grate) the garlic

Drain the sweetcorn
Step 6
Slice the green chilli[es] finely
Step 7
Grate the cheddar cheese
Step 8
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Step 9
Once hot, add the sliced shallot and chopped red pepper with the smoked paprika, ground cumin and a pinch of salt
Step 10
Cook for 2-3 min until the shallot has softened – this is your spicy pepper mixture

Meanwhile, add the tomato paste to a bowl with the chopped garlic and a generous pinch of salt, pepper and sugar
Step 12
Add 5 tbsp [10 tbsp] cold water and stir it all together – this is your tomato sauce
Step 13
Drain the mozzarella, then pat it dry with kitchen paper (squeeze as much liquid out as you can!)

Tear the drained mozzarella into rough, bite-sized pieces

Remove the heated tray[s] from the oven and add the pizza bases

Divide the tomato sauce between the pizza bases and spread it evenly all over them with the back of a spoon

Top with the drained sweetcorn, torn mozzarella and spicy pepper mixture

Sprinkle the pizzas with the grated cheese then top with the sliced green chilli (can't handle the heat? Go easy!)

Put the tray[s] in the oven for 10-12 min or until the cheese has melted and the bases are crisp – these are your veggie fajita pizzas

While the pizzas are cooking, combine the chipotle paste (not a fan of spice? Just add a little!) with the mayo and 1 tbsp [2 tbsp] cold water in a small bowl – this is your chipotle mayo

Serve the veggie fajita pizzas with the chipotle mayo to the side
