Chipotle Beef Protein Pasta

I've been trying to get back on my fitness journey and realized I am not getting enough protein into my diet. This is one way I've started introducing more, with high protein alternatives to one of my tried-and-true recipe. Around 50g of protein per serving and dairy-free, too!

Ingredients
4 servings
5 clovesgarlic
diced
2 tspolive oil
0.5red onion
diced
1red bell pepper
chopped
1 tsppaprika
1 tspchili powder
1 tspgarlic powder
2 tspsalt
1 tspblack pepper
3 ozchipotle peppers in adobo
½ cupbeef bone broth
1 Tbspnutritional yeast
1 Tbsplemon juice
1 boxchickpea rigatoni pasta
16 ozlean ground beef 90/10
2 sprigscilantro
1 cupdairy-free Greek Yogurt
Instructions
Step 1
Boil & salt water then add protein pasta and cook until al dente. Remove and remember to rinse the pasta to remove the leftover starch.
Step 2
Heat pan on medium heat and add olive oil.
Step 3
Once warm, add garlic, red onions, and bell pepper until translucent and fragrant.
Step 4
Set aside, add remaining tsp of olive oil, and the ground beef.
Step 5
Mash and season with salt, pepper, paprika, chili powder, and garlic powder.
Step 6
Allow to cook through and start the sauce.
Step 7
Blend the Kite Hill Greek Yogurt, chipotles in adobo, nutritional yeast, and lemon juice.
Step 8
Check consistency and add around half a cup of bone broth to adjust. Season with salt & pepper to taste.
Step 9
Add the sauce to the pan, top with protein pasta, and mix.
Step 10
Garnish with cilantro and enjoy!
