Shallot and anchovy pasta

Instructions

Step 1
In a large Dutch oven heat the olive oil over medium to medium low heat. Add in the shallots and garlic, season with salt and pepper. SautΓ© stirring occasionally until caramelised, about 15 minutes
Step 2
Cook pasta in salted water, removing from heat when very al dente, pasta will continue cooking in the sauce
Step 3
Add in anchovies and chilli flakes and cook until the anchovies melt, about 2 minutes
Step 4
Add the tomato paste and stir for a further 2 minutes
Step 5
Add pasta to the sauce along with 1 & 1/4 cup of pasta water and stir until thickened.
Step 6
Serve topped with chopped parsley and grated Parmesan
