Instructions
Step 1
In a large Dutch oven heat the olive oil over medium to medium low heat. Add in the shallots and garlic, season with salt and pepper. Sautรฉ stirring occasionally until caramelised, about 15 minutes
Step 2
Cook pasta in salted water, removing from heat when very al dente, pasta will continue cooking in the sauce
Step 3
Add in anchovies and chilli flakes and cook until the anchovies melt, about 2 minutes
Step 4
Add the tomato paste and stir for a further 2 minutes
Step 5
Add pasta to the sauce along with 1 & 1/4 cup of pasta water and stir until thickened.
Step 6
Serve topped with chopped parsley and grated Parmesan
