In a pan, brown ground beef and pork until fully rendered.

In a pot or dutch oven, make a soffrito by sweating minced onion, carrot, and celery in olive oil.

Once the soffrito is cooked, add minced garlic and cook until fragrant.

Then add tomato paste, gochujang, and gochugaru. Cook until darkened.

Then add the cooked meat, a bottle of red wine and reduce by 90 %.

Add a bottle of tomato passata, and a thyme and bay leaf bouquet. Simmer for 2 hours.

Season to taste with salt and pepper.

Cook tteokbokki in boiling water until softened, about 2 min. Then combine with an appropriate amount of gochujang bolognese and enjoy!
