Instructions
Step 1
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Step 2
Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

Step 3
Add the ground beef to the pot and cook, breaking it apart with a spoon, until it's browned and no longer pink.

Step 4
Stir in the chili powder, ground cumin, paprika, dried oregano, salt, and pepper. Cook for another 2-3 minutes to toast the spices.

Step 5
Add the diced tomatoes, kidney beans, black beans, and chopped green chilies to the pot. Stir to combine.

Step 6
Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 30 minutes to allow the flavors to meld. Stir occasionally.
Step 7
Taste and adjust the seasoning if needed.
Step 8
Serve the Chili Con Carne hot, with optional toppings like shredded cheddar cheese, sour cream, chopped green onions, or fresh cilantro. It's great over cooked rice or with cornbread on the side.
