oven-baked stuffed peppers!

these are so easy to make and can be altered in lots of ways! you can also make the filling with ground beef or rice. I used tofu for this recipe to make it more versatile and vegetarian-friendly.

Instructions

Step 1
- halve peppers and remove the stems

- crumble tofu into small pieces. heat up some oil in a pan and mix well

- season with salt, pepper, paprika, turmeric and chili flakes and mix until the tofu takes on a yellow color. fry tofu for about 10 minutes

- fill paprika halves with the tofu mixture, then coat with cheese and top with jalapeños
