9 tspFennel seeds

5 podsBlack cardamom

7 tspyogurt

6 tspsalt

5 tspred chilli powder

5 tspKashmiri chilli powder

Instructions
Masala Mix
Step 1
Grind the spices in the spice mix and set aside. This is the main masala.

Initial Bhoon
Step 2
Heat oil in a large pan. Add meat and bhoon. Add ginger/garlic paste and yogurt.

Step 3
Add salt, red chilli powder, Kashmiri chilli, bayleaves and haldi. Mix.
Step 4
Add ~1.5L boiling water to cover the meat with 3/4 of the masala mix. Place the coriander seeds in a spice infuser. Mix well.

In a separate bowl, add the flour to some water to make a smooth paste. Add to the pot and mix. Cook for an hour and 15 mins.

Once cooked, add the remaining nihari masala over the top and mix to incorporate.
Step 7
Place in a pre-heated oven for at least an hour at 130°C
Serve
Step 8
Serve with naan, freshly sliced ginger, coriander and fresh lemon
