Instructions

Step 1
In a high speed blender, add all pesto ingredients and process until the mixture is combined but still has a slightly chunky texture
Step 2
Mash avocado into a bowl with a fork. Add pesto and stir to combine. Season to taste
Step 3
Cook pasta in a pot of boiling, salted water. Drain and stir through vegan butter and pesto until the pasta is evenly coated
Step 4
serve in a bowl and top with pistachios, fresh herbs of choice, salt and freshly cracked pepper
