Instructions

Step 1
Sift the flour into a bowl, add the egg, mix and gradually add the milk to create a batter. Season well
Step 2
Heat the butter in a pan and add just under a ladleful of batter and immediately start swirling it round the pan to get a nice even layer
Step 3
Cook for 30–40 seconds. Use a palette knife to lift the crepe carefully to look at the underside to check it is golden brown before turning over
Step 4
Cook the other side for approximately 30–40 seconds and transfer to a serving plate
Step 5
Top with the arugula and chopped cherry tomatoes
Step 6
Finally, grate the parmesan on top to finish
