Instructions

Prepare Fruit for Garnish

Step 1
Slice 1 banana into discs and set aside.
Step 2
Wash 5–6 blueberries and slice 2 strawberries and set aside for garnishing.

Make the Batter

Step 3
In a large mixing bowl, mash 2 ripe bananas.
Step 4
Add the remaining strawberries and blueberries (excluding garnish portion) to the bowl and mash with the bananas until smooth.

Crack in the eggs, then add the flour (if using), protein powder, baking powder, vanilla extract, and cinnamon.

Mix until the batter is well combined and smooth.

Cook the Pancakes

Step 7
Heat a non-stick pan over medium heat and melt a bit of butter.

Pour a portion of the batter into the pan to form a 6-inch pancake.

Cook until bubbles form on the surface, then flip and cook the other side until golden.

Repeat for the remaining batter, adding more butter if needed.

Garnish and Serve

Top the pancakes with the reserved banana slices, blueberries, and sliced strawberries.

Drizzle with honey or maple syrup if desired. Serve warm!
