Ingredients

2 Tbspolive oil

1onion
small, minced

3garlic cloves
minced

1 tspdried oregano

1 tspitalian seasoning

½ tspred pepper flakes

2 oztomato paste

28 ozcan whole peeled San Marzano tomatoes
hand blended

1 tspbrown sugar

½ tspbalsamic vinegar

1 tspsea salt

½ tspseasoned salt

½ tspblack pepper

1bay leaf

5fresh basil leaves
diced, or 1 tsp dry

1 TbspParmigiano Reggiano

1 Tbspbutter
Instructions
Step 1
Heat olive oil in a medium saucepan, over medium-low heat.
Step 2
Add the onion and saute until translucent, about 5-7 minutes.
Step 3
Add minced garlic and seasonings and cook for another minute. Add the tomato paste and saute for 1-2 minutes longer.
Step 4
Add the tomatoes, brown sugar, balsamic vinegar, salts, pepper and bay leaf. Mix well and slow simmer on low heat for about 20 minutes.
Step 5
Remove from the heat and remove the bay leaf. Add the basil, Parmigiano Reggiano and butter and mix until the butter is completely melted into the sauce.
Step 6
Cool completely before using it on pizza. Store refrigerated in an airtight container for up to 2 weeks.
