Step 1
Add a little oil to a pot on medium heat then add the miso paste and toast it for a minute . Add garlic and ginger cook another minute then add vegetable broth and water

Step 2
Add cubed tofu and bok choy . I chop some of the bok choy and have some whole . I use firm tofu as I like the bite but you could use silken tofu if you prefer . Now add the white parts of the green onions light soy and white pepper bring to a boil then lower the heat to medium cover and simmer ten minutes

Step 3
In a bowl beat two eggs then stir the soup continuously while drizzling in the egg . Once all the egg is used take the pot off the heat then serve with the green tops of the scallions and a drizzle of toasted sesame oil in each bowl
