1 poundparsnips
1 poundcarrots
1 poundturnips
1 tablespoonskosher salt
1 teaspoonblack pepper
1 tablespoonfresh parsley

1 cupgolden raisins
½ cupolive oil
2 tablespoonshoney
parsley
freshly chopped, for garnish
1 tablespooncumin
1 tablespooncoriander
1 tablespoongranulated garlic
1 teaspoonfennel seeds
½ teaspoonnutmeg
1 teaspoonallspice
½ teaspooncinnamon
½ teaspoonturmeric
1 tablespoonground ginger
1 tablespoonkosher salt
½ teaspoonblack pepper
¼ teaspooncayenne pepper
Instructions
Step 1
Preheat oven to 400 degrees.
Step 2
Peel and cut all vegetables into equal-size chunks and toss with olive oil, salt, pepper, dried parsley and Moroccan spices. Place on cookie sheet lined with foil. Do not let vegetables pile on each other. If necessary, use a second cookie sheet.
Step 3
Roast for about 20 minutes or until fork-tender.
Step 4
Meanwhile, soak golden raisins in 1 cup boiling water until soft. Drain. Add the raisins to the vegetables. Pour honey over all.
Step 5
Reheat in oven for 10 to 15 minutes. Just before serving, garnish with freshly chopped parsley.
