One Pot Miso Parmesan Pasta

One-pot miso parmesan pasta is a convenient and flavorful dish that minimizes cleanup while delivering a fusion of umami and creamy flavors!
Tips:
-Keep an eye on the liquid level. You may need to add more broth if it evaporates too quickly. Conversely, if there's too much liquid left when the pasta is done, you can simmer the dish uncovered for a few minutes to thicken the sauce.
-Simmer, Don't Boil: Maintain a gentle simmer rather than a rolling boil. Boiling too vigorously can cause the pasta to overcook and the sauce to reduce too quickly.
-Try adding protein like chicken, sausage, or shrimp, and incorporate vegetables like spinach, bell peppers, or mushrooms to make it a complete meal.

Ingredients

10 ozshort shaped pasta
fusilli, bowtie, penne, rotini, cavatappi

2 Tbspbutter

2garlic cloves
minced

1shallot

2 ½ cupslow sodium chicken broth
or vegetable broth

2 Tbspmiso paste
awase miso

1 tspgarlic powder

½ tsponion powder

½ tspblack pepper

⅓ cupheavy cream

½ tsphoney

½ cupgrated parmesan cheese

salt

Instructions
Step 1
In a large, deep skillet or pot, heat the butter over medium heat. Add the minced garlic and shallots. Sauté for about 1 minute, or until fragrant.



Step 2
Pour in the chicken or vegetable broth to the skillet.

Step 3
Add in the garlic powder, onion powder, black pepper, and miso paste. Mix to combine.




Step 4
Mix in the pasta. It is best to use short pasta like fusilli because they will cook quicker and more evenly.

Bring the mixture to a boil, then reduce the heat to a simmer. Cook the pasta in the broth, stirring occasionally to prevent sticking, for about 10-12 minutes or according to the package instructions, until it's al dente and most of the liquid is absorbed.
Step 6
Once the pasta is cooked, pour in the heavy cream, honey and grated Parmesan cheese. Stir well to combine, allowing the cheese to melt and the sauce to thicken.



Step 7
Season the pasta with salt and black pepper to taste. Be mindful of the salt as Parmesan cheese and miso paste are already salty. Honey will offset the saltiness. I used about 1/2 tsp but you can use up to 1 tsp of honey.


Step 8
Continue to cook for an additional 2-3 minutes, or until the sauce has reached your desired consistency. If the sauce is too thick, add a little more vegetable or chicken stock.
Step 9
Remove the skillet from heat and let it rest for a few minutes to allow the sauce to further thicken.
Step 10
Serve the pasta in bowls, garnish with extra parmesan cheese and green onions if desired, and enjoy your delicious, one-pot meal.
