Instructions
Step 1
Roast Mixed Veggies (all but Kale) on a Sheet-pan in the oven or in an air fryer with olive oil, salt & pepper
Step 2
Make Chicken Breast with preferred method
Step 3
Make Dressing by mixing Olive Oil, Apple Cider Vinegar, Dijon Mustard, Honey, & Lemon together with a dash of salt
Step 4
Mix roasted veggies with chopped kale, add dressing, chicken and pumpkin seeds on top and enjoy!
