Instructions
Step 1
Dough: - On a stand mixer bowl, put 600g flour, 1 tsp salt and 2tsp sugar. Mix together. Add the 220g cold diced butter (or vegetable shortening). Coat and pinch the butter with flour. - Add 180-200ml water. The dough will feel dry but this is ok, dont put too much water. Just mix it by hand no need to knead it. Do this to form a dough. Continue mixing it on working bench for about 1 min - Cover with plastic, and let it rest for 10-15mins
Step 2
Filling: - Dice the cooked ham (you have to option to cook the ham or use it as is since we are going to use cooked ham), cheese, and bell pepper. Mix it all together in a bowl, season with 1/2 tsp salt, pinch of pepper, 1tsp chili powder (optional), and 1/2cup mayo (this will serve as a binder). Mix until incorporated and set aside. - beat 1 egg
Step 3
Lightly dust workig bench and empanada moulder. portion the dough, place it on the empanada moulder then add a spoonful of filling,brush perimeter of the dough with egg wash then press empanada moulder
Step 4
For baking: brush the empanadas with egg wash and bake at 180C for 20-25mins For frying: heat oil to about 160-180C and deep fry the empanadas until golden brown
