250gblack-eyed beans
soaked overnight

1red onion
medium, diced

3 Tbsptomato purée

1 Tbspground cumin

2 tspturmeric

2 tspsmoked paprika

450mllow salt vegetable stock

rapeseed oil

Instructions
Step 1
Replace the water in the beans and bring to the boil. Simmer for 30-40 minutes before draining and rinsing.
Step 2
Heat some oil in a separate saucepan and add the chopped veg, turmeric, cumin and seasoning. Cook for 8-10 minutes on medium heat.
Step 3
Add the beans, tomatoes, tomato purée and stock and mix till incorporated. Bring to a boil and then simmer for 30 minutes.
