Step 1
Add pumpkin seeds to a baking tray and

place in the oven on a high heat for 4-5 min-

utes until the seeds begin to toast.

2 In a bowl, skin and mash the avocado with the

lime juice, salt, black pepper, chilli flakes and

coriander then mix well.

3 In a frying pan, heat a little coconut oil. Peel,

cut and fry the plantain on each side until-

4 Toast the bread or butter it and fry it on a

griddle pan.

toast, followed by the plantain slices and a
