Shakshuka on Potato Waffles

Instructions

Step 1
1) Cook your potato waffles in the oven or following the package instructions.

2) Heat olive oil in a pan.
Step 3
3) Once the oil is hot, add onions, cook on medium-high heat, and stir continuously to prevent burning.

4) Saute until onions are soft, then add garlic.
Step 5
5) When onions turn golden, add tomatoes.
Step 6
6) Cook for two minutes, then add capsicum.
Step 7
7) Cook for another two minutes, then add seasoning.

8) Mix and add green chillies.
Step 9
9) Once mixed, add harissa paste and tomato paste.

10) Combine everything well.

11) After two minutes, add water.

12) Stir, bring to a boil on medium-high heat, then cover with a lid on low heat for five minutes.

13) The sauce should slightly thicken; if it's still watery, don't worry.

14) Make four wells in the sauce.

15) Crack eggs into a dish, add them to the pan one by one, sprinkle a pinch of salt on each egg.

16) Garnish with fresh parsley.

17) Cover again with a lid on low heat for five minutes.

18) Meanwhile, check if your waffles are done.

19) Plate the dish, placing a portion of shakshuka on top of each waffle.

20) Garnish with Aleppo Pepper and fresh parsley.
