Peanut Chicken with Noodles

Creamy peanut butter, dark sesame oil, and Japanese soba noodles give this dish a punch of protein and delicious nutty flavor. If you don't want to fire up the grill, simply poach, bake, or pan cook the chicken. Look for soba noodles and rice vinegar in the Asian section of your store or health food store. (SBD Phase 2)

Instructions

Step 1
Cook noodles according to package directions; run under cool water and drain.
Step 2
Season chicken well with salt and pepper and toss with 1 tsp of the oil.
Step 3
Heat grill pan or skillet over medium-high heat; cook chicken until browned and cooked through, about 4 minutes per side. Transfer to a cutting board.
Step 4
Whisk together peanut butter, soy sauce, vinegar, water, and remaining oil in a large mixing bowl.
Step 5
Thinly slice chicken and add to the peanut butter mixture.
Step 6
Add noodles, cabbage, and scallions; toss gently to combine and serve.
