Quick Beef Enchilada Casserole

All the flavor of beef enchiladas without taking the time to roll them. Serve with a fried egg on top of each portion with cilantro lime rice and calabacitas on the side.

Instructions
Step 1
Preheat oven to 350°. Spray 9x13 in baking dish with cooking spray. Brown ground beef and sausage (if using) in a skillet until cooked through.
Step 2
Spoon just enough enchilada sauce in the baking dish to cover the bottom. Place tortillas on top of the sauce. I like to split one or more tortillas in half or even in quarters to get more coverage.
Step 3
Spread half of the soup over the tortillas. Then add 1/3 of the meat, 1/3 of the enchilada sauce, and 1/3 of the shredded cheese.
Step 4
Place more tortillas and repeat layers: 1/2 of the soup, 1/3 of the meat, 1/3 of the enchilada sauce, 1/3 of the cheese.
Step 5
Place one more layer of tortillas, the rest of the meat and cheese, and top with the last drizzle of sauce.
Step 6
Cover with foil and bake in preheated oven 25 minutes. Take off the foil and continue baking for 5 minutes or until cheese is bubbly around the edges.
Step 7
During the last 10 minutes of baking, fry an egg for each person. Serve the fried egg on top of each portion of enchilada casserole. Try also serving with cilantro lime rice and calabacitas.
