Sausage & Bean Burrito

For this recipe to qualify as a HighSatiety meal, use wholemeal tortillas as well as low fat sausages and light cooking oil spray to keep the calories down. These burritos are extremely filling due to their high protein content and one burrito also provides a decent amount of the daily recommended fibre intake. Great for breakfast or as a light lunch or snack.

Instructions

Step 1
Chop the onions, peppers and sausages. Over a medium heat, spray the oil into a saucepan and add the onions, peppers and sausage. Cook for around 5 minutes then add the black beans, salsa , half a tablespoon of water and a pinch of salt. Cook for a further 5 minutes stirring regularly. Mix two beaten eggs and the coriander and pour into another saucepan over a medium heat. Stir until the egg begins to harden. Cook the tortillas as per the cooking instructions then add half of the sausage and bean filling as well as the egg mixture to the centre of each tortilla. Sprinkle the grated cheese over the filling mixture then fold up the burrito. Makes two burritos.
