250gGround pork
1Eggplant
large, peeled
1Tomato
peel and cubed
6 clovesGarlic
2Green onion
½ tspVinegar
1 tbpCooking wine
200gNoodles
Sauce
Instructions
Step 1
Peel and cut eggplant into finger size sticks. Sprinkle salt and 1/2 tsp of vinegar and set aside for 10min. Pat dry excessive water.
Step 2
Mix all ingredients in sauce.
Step 3
Put generous amount of oil and fry ground pork til golden brown. Deglaze with cooking wine. Drain oil and return to pot.
Step 4
Put a bit more oil if necessary, fry eggplant on medium high til softened.
Step 5
Put in part of minced garlic and chopped green onion and fry til fragrant.
Step 6
Put in tomatoes and fry until juice thickened.
Step 7
Put in sauce, bring to boil and cook on medium for 5 min.
Step 8
Put in starch water and reduce until to desired consistency.
Step 9
Fold in rest of the garlic. Serve on top of cooked noodles.
