Instructions

Step 1
Thaw and drain corn then char in a frying pan. Spread on a plate and place in the fridge to cool.
Step 2
Slice the green onion saving the tops for garnish.
Step 3
Brown the beef in a frying pan. Add the sliced green onion. Add cumin, oregano, paprika, and chili powder. Add salt and pepper to taste. Add beef broth to deglaze then reduce down.
Step 4
Juice the limes. Dice the tomatoes, red onion, jalapeños, and cilantro. Combine all in a bowl with the corn to make the corn salsa. Add salt and pepper to taste.
Step 5
Drain and rinse the black beans.
Step 6
To assemble the bowls, layer rice, beef, cheese, corn salsa, and black beans. Garnish with sliced green onion tops and diced avocado.
