1 Tbspavocado oil

0.25red onion

1yellow bell pepper

1carrot
small

1 poundground beef

1 packettaco seasoning

1 cupbeef bone broth

1can diced fire roasted tomatoes

1can black beans

1 cupfrozen corn
optional

1lime
Juice, half for recipe, half for topping

sea salt
to taste

pepper
to taste

fresh cilantro

Instructions
Step 1
Sauté diced onion, bell pepper, and carrot in avocado oil until softened
Step 2
Add ground beef and cook until browned. Drain excess grease if needed
Step 3
Add taco seasoning and mix. Use splash of broth to help incorporate
Step 4
Add can of tomatoes and broth
Step 5
Bring to boil. Then then to low and let simmer for 10 minutes
Step 6
Add can of black beans and simmer for 5 more minutes
Step 7
Add additional broth to desired consistency
Step 8
Add 1/2 of lime juice, and salt and pepper to taste
Step 9
Serve with toppings and more lime juice
