Instructions
Step 1
Start by cooking spelt to package instructions, then leave to cool fully.
Step 2
The for the patties, simply add all ingredients to a bowl and mix together with your hands, lightly mashing up the beans and incorporating everything together. Season to taste, cover, and refrigerate to firm up the mixture.
Step 3
Start by adding the pickled radish ingredients to a bowl, and mix well. Cover and refrigerate until ready to serve.
Step 4
For the whipped feta, simply add all ingredients to a blender or food processor, and whip until fluffy.
Step 5
Split the butterbean mixture into 4 and form into burger patties with your hands, pressing the mix firmly together.
Step 6
Preheat a pan on medium heat and add a generous amount of olive oil. Cool the patties for 3-4 minutes on each side.
Step 7
Assemble on brioche buns with sweet chili mayo and rocket.
