Instructions

Step 1
Soften cream cheese in the microwave, then cut into ½ inch chunks (this will help the cream cheese melt into the soup better). Set aside.
Step 2
Brown sausage slices in a large pot. Set aside. In the same pot, add chicken broth, tomatoes, garlic, garlic powder, onion powder, basil, oregano, pepper to taste, and cream cheese chunks. Let cream cheese melt into the soup, this might take around 5 minutes. If cream cheese does not seem to be melting into the soup, squash chunks until they seem to be incorporated into the broth.
Step 3
Taste soup, if lacking in flavor, season with salt to taste. Add tortellini, sausage, and spinach, cook for around 20 minutes or until tortellini is done. Keep an eye on your tortellini, it may be done sooner. It gets soggy if cooked too long.
