Instructions
Step 1
On a large pan add the olive oil and bring to medium heat. Add the leek finely chopped and garlic cloves. Sautรฉ for 5 minutes until it turns translucent. Add the zucchini finely sliced. Cover pan with a lid and cook for about 20min until it turns completely soft. Stir with a spoon every 5 min.
Step 2
Cook the gnocchi following the package and reserve the cooking water
Step 3
To a food processor add the cooked zucchini, pistachio, Parmesan and basil with about 1/4 cup of the gnocchi cooking water and blend until smooth (you can add more water if needed). Season to taste
Step 4
Mix the gnocchi with the green goddess sauce on the pan and bring to medium heat for a couple of minutes to warm it up
Step 5
Serve with fresh torn burrata, a drizzle of olive oil and chopped pistachios on top
