Mickey Ice Cream Sandwiches

Instructions

Step 1
Preheat oven to 350°F. Line a large ungreased baking sheet with parchment paper and set aside.

2. In the bowl of a stand mixer, add butter, shortening, sugar, eggs, and vanilla. Using the flat beater attachment, cream together well. Add flour, cocoa powder, salt and baking powder. Mix until well combined.

3. Using two sizes of cookie scoops, make Mickeys by placing a larger circle of dough onto prepared baking sheet, then adding two “ears” above it with the smaller scoop (you can also use a Mickey cookie cutter). Grease one side of a spatula and flatten scoops slightly. Use fingers to smooth dough between the “ears” and “head” so they connect. Poke circles a few times with a fork to prevent them puffing up.
Step 4
4. Bake Mickeys 20 minutes, or until bottoms are starting to firm up, then allow to cool completely on the sheet, about 30 minutes.
Step 5
5. Allow ice cream to soften slightly, about 5 minutes, on the counter. Scoop ice cream onto 1 cookie and top with another cookie. Repeat with remaining cookies and ice cream. Freeze ice cream sandwiches until firm, about 2 hours, or serve immediately.
