Instructions
Step 1
Add leeks to a pot with olive oil and butter. Soften for 5 minutes
Step 2
Then add the onion and garlic and soften for a further 10 minutes
Step 3
Next add the potatoes, followed by the salt, pepper, chilli flakes and rosemary
Step 4
Summer on low heat for 35-40 minutes or until the potatoes have softened
Step 5
Remove the rosemary, then add the stock & boiling water. Bring to a boil then remove from the heat and blend
