Lasagna Stuffed Pasta Shells

Who doesn't love Lasagna, well this lasagna is stuffed into a jumbo pasta shell and loaded with ground beef, tomato sauce, cheese and smoked beef sausage.

Instructions

Step 1
First dice your onion, bell pepper and beef sausage into small pieces, then add the diced veggies to a frying pan with oil and sauté the veggies until soft then add the minced garlic and cook until garlic becomes fragrant.
Step 2
Next add your ground beef and seasonings to the pan with the veggies and cook until browned, and then add in one jar of sauce and 1 cup of each cheese mozzarella and cheddar and mix together.
Step 3
Next get a boiling pot filled halfway with water and bring to a boil on medium high heat. Once the water is boiling add a teaspoon of salt to the water then add your pasta shells and cook for about 10 minutes or until al dente because the shell will continue cooking in the oven and you want to be able to stuff the shells without breaking them.
Step 4
Next drain your shells and sat them in a baking dish with half of the other jar of sauce on the bottom of the pan. Take one shell at a time a stuff a spoonful of the meat mixture inside, continue this until all shells are stuffed. Then top the shells with ricotta cheese and the rest of the sauce and shredded cheese and bake in the oven covered with foil for about 15 minutes until cheese is hot melted and bubbly.
Step 5
Once the shells are finished garnish the top with parsley and parmesan if you choose and enjoy.
